How can I test if my sourdough is weak?
  - Refresh the sourdough and get a spoon of it
  - Shape it as a ball
  - Dive it in a cup full of warm water
  - After 4 hours it must float, if it don't, it is weak

We have many way to correct a weak sourdough:

I have tested 5 different way, but I prefer the 2nd and the 3rd:
1) Refresh your sourdough and add also 2 teaspoons of sugar or honey (Pay attention to the taste and scent of the honey you will add, the bread could taste the same.)
2) Refresh your sourdough and add also 1 teaspoon of white yogurt and 1 teaspoon of sugar or honey
3) Knead your sourdough adding ONLY 1 tablespoon of white yogurt (no water and flour)
4) Refresh your sourdough and add also 1 tablespoon of beer (Pay attention to the taste and scent of the beer you will add, the bread could taste the same.)
5) Refresh your sourdough and after only 2 hours refresh it again
* Quantity may vary
* Making your bread, consider to adopt all the tips that you find here

The sourdough can be also acid, too much strong, etc. I tried more than once to correct this kind of sourdough, but I always fail.
In these cases my advice is to start with a new self made sourdough.
